Potatoes with chorizo & bacon

Peel and chop potatoes - place in frying pan in hot olive oil with chopped garlic and salt & oregano, stir and then add chopped bacon pieces and chopped chorizo. Cook on a high heat until you see that bacon is cooked. Then add a dash of red wine, place lid on the pan and lower the heat and simmer for 15 mins.
The simmering in the olive oil, potato, wine, bacon and chorizo juices will make the potatoes nice and soft.
Tasty dish!!

Razor clam starter with sea bass and potatoes & Chantenay carrots

Large Sea Bass - garnish with garlic, olive oil, parsley, sea salt ... couple of slices of chorizo - roast for 35 mins at 200c
Potatoes & Chantenay carrots - garnish with sea salt, garlic, oregano, rosemary, ground pepper, olive 
oil - roast 40 mins at 200c (finish with 5 mins under a grill)
Fresh live Razor Clams - heat olive oil in a pan add clams, garlic, parsley, butter and 
place lid on pan and cook for about 3 mins moving and shaking clams while cooking.

The BIG salad


Fry chicken with 4 whole garlic cloves (take out and crush and put back) with mushrooms & season with oregano and salt.
lastly in separate pan fry chopped chorizo with crushed garlic and a little olive oil
Add chicken and mushrooms and mix in with the salad. Dress with white wine vinegar, olive oil, sea salt. Add the chorizo and juices last.

The BIG salad! ..... Chicken, mushroom and chorizo salad.



Chopped chipolatas, tin off chopped tomatoes, wine, oregano, basil, chopped garlic, salt, sugar.
Serve on/mix with pasta

Tomato, garlic, bay leaf, wine, pepper chicken thigh with pea, mushroom, garlic, olive oil, chicken stock rice. 


Mince meat, garlic, oregano, basil, salt, pepper, tin chopped tomatoes, wine, sugar - served with - Gnocchi. Whole portobello mushroom topped with mozzarella cheese, chorizo & a sprinkle of salt & basil then baked.
